Shoushin serves a handpicked, constantly rotating selection of sakes, wines and spirits. All were chosen to coordinate beautifully with different dishes. On occasion we feature exceptional, hard-to-find beverages that make exquisite accompaniments to specific dishes or meals.
Currently we are the only restaurant in Canada serving one of the finest cognacs in the world: the 100-year-old Louis XIII Rare Cask 42,6. There are only 738 bottles in existence. The second release of its kind, Rare Cask 42,6 is the culmination of a 100-year journey undertaken by Rémy Martin’s cellar masters.
Chef Jackie Lin recommends pairing this cognac of extraordinary richness and depth with seared toro topped with uni and sturgeon caviar.
