The Philosophy Behind Shoushin
Shoushin opened in October 2015. It sprung from a vision of bringing authentic, Tokyo-style sushi to Toronto.
The word Shoushin comes from the Chinese phrase 匠心獨運 which means ‘to show one’s own ingenuity, crafted to perfection’.
Shou — 匠 — means craftsman; Shin — 心 — means heart. Together the characters represent ingenuity. As the word says, Shoushin puts its collective heart into crafting the best sushi. Years of experience, the most authentic ingredients, and a commitment to lifelong learning of our craft, are behind every dish we serve.
Shoushin also believes that elevating one’s appreciation of sushi should extend beyond the palate to encompass the entire sensory experience. This philosophy drove the choice of hinoki wood to make the sushi bar and the concept of a restaurant with a gallery within.
